Arugula + Orange Salad

Making this brought back the memories of a child. It rushes back memories of playing outside with all the other children in our neighborhood. I loved that I grew up in the ’90s. As kids we played outside, had real relationships with one another, we used our imaginations and created our own games, that I would never give up on having a phone or video games.
I am also reminded of Summer nights and playing cops and robbers. The problem was, with my visual impairment I wasn’t able to just run off by myself, I always had to have a partner. I would have to hold my partner’s hand and listen closely so I wouldn’t trip over cracks in the sidewalk, or run into a tree. I was too proud, even as a child, to give into challenges that came my way. I would suck it up, it wasn’t worth being left out of the game with all my friends.
Being a kid growing up visually impaired wasn’t easy. It would get exhausting reminding people to not forget you. I’m sure when this point was, but it sound came to the point I would shake my head and smile, pretend I could see what they were talking about, or imagine it and picture it in my mind.
As I kid you don’t want to worry about things, life isn’t supposed to be hard. You are supposed to just enjoy playing outside with your friends and doing your homework, but growing up with a disability it was always in your face. New situations were arising that I had never faced before. As a child, I learned from my parents when to speak up and how to speak up. I would learn how to stare my disability in the face and shake hands with it, how to let it be part of me, but not control me!
Summer isn’t over yet! Still time for grilling, ice cream trucks, and beach days. If you don’t believe me, make this arugula orange salad, I promise it’ll bring sunshine and summer back to your day…even if it is rainy outside. What things are you holding onto to slow down summer from leaving?
